Oatmeal Raisin Breakfast Cookies

Looking for a quick ready-to-go breakfast but still wanting to fuel yourself (or your kiddos) with a breakfast that doesn't have them saying "I need a snack" 10 minutes later? I'm with you! As the weather beakons us to get outside as quickly as we can, I needed to find a way to get some protein, fiber and healthy fats consumed, in a quick (and extra points for portable!) way! Enter, the breakfast cookie.



This is definitely not a novel idea, but I hope this version of the humble breakfast meets oatmeal raisin cookie, can bless you and your family and fuel you for a great day!

Preheat oven to 350* F

In a large mixing bowl, combine everything together until smooth

I like to let the dough rest for around 30 minutes in the refrigerator to let the oats and chia seeds soak up the mixture - make them a bit softer and the dough a bit more cohesive, totally optional though! can move right along to baking!

When ready to bake, scoop around 2 TBSP of dough onto cookie sheet, no need to flatten; bake 10-12 minutes or until edges of cookie are just starting to brown

Let rest a few minutes to cool and the cookie to set-up

Instructions

1 cup oats (quick or old fashioned both work)

1 cup oat flour (can grind oats into flour or use any AP flour in place of this)

2 eggs

2 TBSP chia seeds (opt. can swap with flax seed or leave out)

2 TBSP molasses

1/4 cup monk fruit sweetener (or other granulated sweetener of choice)

1/4-1/2 cup raisins

1/2 cup fruit or vegetable puree (I love carrot puree here but applesauce or banana also work!)

1/2 tsp salt

1/2 tsp baking soda

1 tsp cinnamon

1/4 tsp nutmeg

1 tsp vanilla extract

2 TBSP almond butter (can sub peanut or other nut butter)
