Preheat waffle iron. You can either shred carrots or use a blender for this recipe

If using blender - add carrots to blender and pulse to get 'shredded'. (otherwise, shred carrots) Then take out carrots and add to blender:, cottage cheese/greek yogurt, eggs to blender and blend until smooth

Mix together all remaining ingredients, then stir in wet, finally folding in carrots and pecans if using

Butter waffle iron to prevent sticking, the add batter and cook to desired crispiness

Enjoy with syrup or a simple 'frosting' of greek yogurt mixed with maple syrup (about 1/2 cup yogurt to 2 TBSP maple syrup if a ratio we like)

Instructions

1 cup oat flour

3 large carrots (shredded)

1/2 cup cottage cheese (or sub Greek yogurt)

2 eggs

1 tsp cinnamon

1/4 tsp ground ginger

1/2 tsp nutmeg

1/2 tsp salt

1 tsp vanilla extract

1/4 cup protein powder (or sub more oat flour)

1/4 cup chopped pecans (optional)
